St. Tropez Bistro and Parlor
St. Tropez Bistro has been in residence on the ground floor of this historic building for well over 20 years. The restaurant has a decidedly European feel where Saskatchewan ingredients (including those picked fresh from the rooftop garden) are showcased in dishes inspired by owners Jason Strohan and Cher Diller’s travels. Take the stairs to the left of the entrance to the Parlor cocktail bar, a happening spot any night but especially lively during Sunday karaoke.
The bistro’s iconic sky-blue building was commissioned and built by prominent realtor Albert Hanson in 1906. At that time, the building was known as the Hanson Building and housed the Bank of Nova Scotia when their first branch opened in Saskatoon; Hanson’s realty firm also occupied the second floor until his passing in 1946. The building has housed many different businesses, and changed names a few times until 1998, when Jason Strohan and his parents purchased it and moved their restaurant, St. Tropez Bistro, into the space.
